One-Pan Honey Garlic Chicken & Veggies 🍯🍗🥦
This one-pan meal is a lifesaver for busy Mondays! Juicy chicken, roasted veggies, and a sweet-savory honey garlic sauce—healthy, delicious, and minimal cleanup!
Ingredients:
✅ 2 boneless, skinless chicken breasts (cut into chunks)
✅ 2 cups broccoli florets
✅ 1 cup cherry tomatoes (halved)
✅ 1 bell pepper (sliced)
✅ 1 small red onion (sliced)
✅ 2 tbsp olive oil
✅ Salt & pepper (to taste)
Honey Garlic Sauce:
✅ ¼ cup honey
✅ 2 tbsp soy sauce
✅ 3 garlic cloves (minced)
✅ 1 tsp Dijon mustard (optional)
Instructions:
1️⃣ Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ Toss the veggies with olive oil, salt, and pepper. Spread them on one side of the baking sheet.
3️⃣ Season the chicken with salt and pepper. Place on the other side of the sheet.
4️⃣ Whisk together the honey, soy sauce, garlic, and Dijon mustard. Pour half over the chicken.
5️⃣ Bake for 20-25 minutes, flipping the chicken halfway. Brush with remaining sauce.
6️⃣ Serve hot or store in meal prep containers for the week!
